Here’s the recipe:
Gluten-Free Blender Breakfast Muffins

Total Time: 40 minutes

Yield: 9-10 muffins

Ingredients:

1 cup (240g) dairy-free yogurt (I used almond milk yogurt)
2/3 cup (110g) coconut sugar
2 flax eggs (2 tbsp flaxseed meal + 4 tbsp water) or 2 eggs
1/4 cup (50g) coconut oil, melted (or olive oil)
1/4 cup (60g) almond milk
2 1/2 (200g) cups rolled oats
2 tsps baking powder
1/2 tsp salt
1 tsp vanilla extract
2 tsp cinnamon
1/2 cup (50g) your favorite granola (I love this one)
1/2 cup (g) dried berries (or raisins)
Instructions

Preheat the oven to 350ºF.
Blend everything except the granola and dried fruit (add liquid ingredients first for easiest blending). Don’t over blend or the muffins will turn out gummy.
Stir in the granola and dried fruit.
Scoop into a lined muffin pan.
Top with additional granola.
Bake for 25-30 minutes at 350ºF.
Cool for at least 10 minutes, then enjoy!

A day in the life…
Of a personal chef

Here’s a peak of what a meal prep day looks like. It takes about 5-6 hrs total. While I’m sure you won’t cook like this, I thought it would be helpful to share some time-saving tips for the next time you cook. Here’s a few meal planning tips:
.
• Use notes app to make your grocery list so you can check off ingredients
• Shop the grocery store starting with produce section, then pantry, proteins and cold stuff. It saves you time and mental load!
• Do the baking first since it takes more precision than cooking 
• Place food in containers and let them cool before putting them in the fridge (I prefer all glass Tupperware)
• Wash as you go and place cleaned stuff on a hot stove so the residual heat dries it for you
• Cook with a playlist. It’s always better and sometimes cooking makes you dance

When I want a taste of Italy, this is what I make- Pasta Amatriciana. It’s a simple one that’s unctuous! and it’s got the hint of spice I love in Italian dishes.

Even though I know it’s not the “healthiest” dish, I measure out the pasta for portion control. I have this cool tool to do that. That way there’s no deprivation. I still get to eat what I like. Knowing I have a limited quantity makes it more satisfying. 😁
.
Traditional Italian recipes use red pepper flakes and pancetta but I used fresh Fresno chile and bacon instead. It came out marvellous. It’s definitely a treat to eat! 
.
🧑🏻‍🍳Chef tip: I store cooked bacon in the freezer since I never eat a whole package in a few days. It makes this recipe really easy using already cooked bacon from the freezer. It crumbles easily in your hands.

Pasta Amatriciana

Ingredients (for 2):
Linguini or spaghetti Pasta for 2 (I use a pasta measure)
1 Tbsp. Olive oil
½ red Fresno chile, diced
2 cloves garlic, minced 
¼ red onion, diced small
4 slices bacon, cooked crumbled (I cook batches and keep them in the freezer)
½ small jar marinara sauce (I like Rao’s)
¼ cup chopped parsley 
Grated Parmesan (optional)

Directions:
1. Bring a large pot of water to boil to cook the pasta. Make the sauce while you wait for it to boil. 
2. In a large sauté pan or cast iron, place oil, Fresno chile, and garlic. Heat just until garlic turns golden. Then add onion, crumbled bacon and sauce. 
3. Keep on a low heat and stir occasionally until pasta is ready. 
4. Cook pasta according to package directions.
5. When ready, use tongs to grab pasta and put it directly into the pan with the sauce. Stir just to coat. Mix parsley in right before serving. 
6. Top with Parmesan if desired.
