Today we made 2 simple egg dishes- frittata and scrambled eggs on IG Live

MARTA’S FRITTATA

Ingredients: 

Makes 1 Frittata for 2 people

  • 2 eggs
  • 1 small potato, sliced thin
  • Olive oil
  • 2 T Parmesan cheese
  • 2 T Milk (optional)
  • Parsley (optional)

Directions:

In a non stick frying pan add generous amount of oil (2-3 T) and add thinly sliced potatoes to cover the pan. Do not overlap potatoes, so they can get nice and crispy. Cook until golden brown on medium heat for a couple minutes. Turn once.

Meanwhile whisk the eggs with cheese, milk and pinch of salt. Whisk well. When potatoes are golden brown, pour in egg mixture to cover the pan. Cook a couple minutes until egg almost dry.

Then use a large lid or a plate to flip the frittata in one swift motion. Flip it and put it back into the pan to cook another minute or two. It’s done when no wet egg remains and it’s golden brown. Sprinkle with a little salt if desired and chopped herbs. Eat right away or put in a sandwich. Serve with a side salad for a more complete meal.

One more idiom. La frittata è fatta: the frittata is done! There is nothing else you can do. The damage is done. 🍳
