Vegan Asian Carrot Soup 🌱 with Marie | Feed Your Family Tonight

Marie gave some very helpful tips on the show like freezing homemade vegetable broth and freezing ginger too. She used an instant pot so her’s was done in about 10 minutes. Vegan Asian Carrot Soup

Ingredients: 

  • 1 medium Onion, chopped
  • 1 Celery Rib, chopped
  • 1 Tablespoon Olive Oil
  • 1 Garlic Clove, Chopped
  • 1 Pound of Carrots, peeled and chopped into 1 inch rounds
  • 1 inch piece Fresh Ginger, chopped
  • 1/4-1/2 teaspoon Red Pepper Flakes
  • 3 Cups Vegetable Broth
  • 2 Tablespoons Reduced Sodium Soy Sauce
  • 2 Tablespoons Creamy Peanut Butter
  • 1 teaspoon Toasted Sesame Oil
  • 1 Cup Full-Fat Coconut Milk
