Marie gave some very helpful tips on the show like freezing homemade vegetable broth and freezing ginger too. She used an instant pot so her’s was done in about 10 minutes. Marie is a pro at feeding her family of 6 so I learned a lot. We bonded over our shared passion to make cooking easier and less stressful for the average home cook. Vegan Asian Carrot Soup


  • 1 medium Onion, chopped
  • 1 Celery Rib, chopped
  • 1 Tablespoon Olive Oil
  • 1 Garlic Clove, Chopped
  • 1 Pound of Carrots, peeled and chopped into 1 inch rounds
  • 1 inch piece Fresh Ginger, chopped
  • 1/4-1/2 teaspoon Red Pepper Flakes
  • 3 Cups Vegetable Broth
  • 2 Tablespoons Reduced Sodium Soy Sauce
  • 2 Tablespoons Creamy Peanut Butter
  • 1 teaspoon Toasted Sesame Oil
  • 1 Cup Full-Fat Coconut Milk
