Today I went cooking in the garden to make one of my favorites: Quesadilla de flor de calabaza (squash blossom quesadilla)🌼🧀. I grew up with my dad making these for me whenever zucchini would come in season. This is what a zucchini flower looks like and it’s totally edible. Mixed with cheese in a quesadilla- it is the true spring/summer treat. I topped mine with some salsa and took in the sun for this one. Check out the IGTV video below.
QUESADILLA DE FLOR DE CALABAZA.
Ingredients (for 1):
- 1 flour tortilla
- Mozzarella cheese, shredded
- 1 squash blossom, cleaned and inner stem removed
Toast tortilla a few seconds to make pliable. Then put some cheese and squash blossom on one side. Close tortilla and keep on low heat until toasted and cheese melted, a couple minutes. Enjoy with salsa if desired.
