Easy summer recipes: Roasted Green Beans

A great side for a light fish or chicken dinner in the summer. My mom found these beautiful green beans at the farmer’s market and I had to cook them for dinner. They were so sweet on their own- you can’t always say the same for supermarket produce.

If you’re already using the oven to make dinner, then pop these in there too. I love when dinner can be baked in the oven and not on the stove top, makes clean up a breeze.

Prep time: 10 minutes

Cook time: 20 minutes
Servings: 4


1 lb. green beans, trimmed
2 teaspoons olive oil
½ teaspoon salt
¼ teaspoon pepper
¼ cherry tomatoes
3 cloves garlic, sliced thin


Toss together and bake 400 F for 20-25 minutes or until slightly wilted

Keeps in the fridge for 4 days well.
