Mediterranean Summer Baked Fish

Doesn’t get more simple than this. Get a glas baking dish and cook your summer vegetables a bit. Then, put the fish on top, cook and little more and presto- done! 
Yes, I splurged on some great fish- sole, but you can also use red snapper, tilapia, or shrimp. You can even use frozen, just be sure to thaw it under some cool running water to thaw completey before baking. 

One pound yielded about 4 servings with some roasted green beans on the side. It’s a light dinner that makes you sleep well.

Baked sole fish

Prep time: 10 minutes
Cook time: 30 minutes
Servings: 4

Diet: Gluten and dairy free

Ingredients: 

  • 2 tomatoes, chopped
  • 2 garlic cloves, sliced thin
  • ½ red onion, sliced thin
  • 1 small zucchini, chopped
  • 1 lb. sole fish or other white fish or shrimp
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Directions

Preheat oven to 400 F. Put oil in glass baking dish. Layer with onions, tomato, garlic. Bake for 15 minutes. After 15 minutes, layer fish on top and bake 5-10 minutes or begins to flake.

Top with lemon, basil or parsley when done.
