Healthier Refried Beans | Easy Mexican Vegetarian Dinners | The Weekday Vegetarian

Healthier refried beans! This is a staple in the Mexican house and one of my favorites. Beans have protein and fiber which make them a great meal or snack. When they are tasty like this you can actually get excited to eat beans!

You can use any beans of choice, but here I used white beans. More common are pinto or black beans. The first step is to cook the beans. (Feel free to buy them canned or make them from dried.) Then you blend them with a little water or beans’ cooking liquid. Lastly, you fry them a couple minutes in just a spoon of oil. That’s it, you have refried beans ready for tacos, or even for a chip dip. I hope you give it a try and enjoy a super healthy Mexican meal. (vegan, gluten-free, and all the things!)

Refried Beans

  • 1-2 cups cooked beans (white, pinto, black etc.)
  • 2-3 Tbsp. water or cooking liquid from beans
  • ½ serrano chile (optional)
  • 1 Tbsp. vegetable oil. 

Directions: 

  1. Cook beans until fully cooked (or use canned). 
  2. Blend beans in blender with a couple tablespoons of water or beans’ cooking liquid. (Drain fully if using canned and use fresh water to blend). 
  3. Heat a sauce pan with oil and halved chile, if using. Fry for about 30 seconds, or it starts sputtering (use a lid to protect yourself from splatter.)
  4. Then, stand back from the pan, carefully pour blended beans into the saute pan. Stir constantly on a lower heat for 3-5 minutes or liquid evaporates and it thickens. Taste and salt if needed. Then, enjoy!
