Apricot Shallot Vinaigrette | Ideas for a French Dinner Party

Last week at my dinner party some guests asked about my salad recipe.

So I gave it to them.

Apricot Shallot Vinaigrette 

Ingredients (serves 4): 

  • 4 Tbsp. apricot preserves
  • ½ tsp. Dijon mustard
  • 2 Tbsp. apple cider or white wine vinegar
  • 2 tsp. water
  • ¼ cup extra virgin olive oil
  • ¼ tsp. salt
  • ⅛ tsp. black pepper
  • 1/2 small shallot, finely minced

Directions: 

Whisk all ingredients together until combined. Keep refrigerated and use within 1 week. 

I served it with bleu cheese and candied walnuts.
