Apricot Shallot Vinaigrette 

This is a simple, delicious salad recipe you can serve with Bleu cheese and candied walnuts. It's more French in style. Enjoy.

Ingredients
  

  • 4 Tbsp. apricot preserves
  • ½ tsp. Dijon mustard
  • 2 Tbsp. apple cider or white wine vinegar
  • 2 tsp. water
  • ¼ cup extra virgin olive oil
  • ¼ tsp. salt
  • tsp. black pepper
  • 1/2 small shallot finely minced

Method
 

  1. Whisk all ingredients together until combined. Keep refrigerated and use within 1 week.
