Salmon with tomatillo-avocado salsa

Salmon is one of my favourites but it’s even better with an acidic sauce like lemon. The fattiness of salmon needs an acidic pair. Tomatillo is perfect here.

Salmon (serves 4)

Ingredients:

4 salmon filets

8-10 tomatillos

1 jalapeño

¼ onion

½ cup cilantro

1 lime

1-2 tsp. Agave

½ avocado

Directions:

1. Place tomatillos (keep on husks), chile, and onion on a roasting tray. Roast for 30-40 minutes at temp 425-500 F until chile is totally broken down. Remove from oven and let cool for 30 minutes or so.

2. Remove papery husks from tomatillos. Blend tomatillos, onion and chile(use half first if sensitive to spice) with juiced lime and agave and cilantro. Add a pinch or two of salt. taste and adjust.

3. Place tomatillo salsa in bowl and add cut avocado. Mix in.

4. Pan-fry the salmon in a little oil. Then top with tomatillo salsa. Enjoy!
