2 Minute Bruschetta | Recipes for Summer | Vegan summer recipes

Anybody for a light lunch? This is the soup+bruschetta combo and gets me every time! 🇮🇹
I want to share a quick tip on how to make a great bruschetta so you can enjoy it too.

“On the fly” Bruschetta

Ingredients(for one):
* good bread, toasted
* ½ cup cherry tomatoes, halved
* Pinch of salt and pepper
* Drizzle of olive oil
* Few leaves of fresh basil
* 1 garlic clove

Directions:
Toast bread. Meanwhile mix remaining ingredients *except* garlic. I don’t add garlic to the tomatoes because it gets super strong. 𝘐𝘯𝘴𝘵𝘦𝘢𝘥, 𝘺𝘰𝘶 𝘤𝘶𝘵 𝘢 𝘨𝘢𝘳𝘭𝘪𝘤 𝘤𝘭𝘰𝘷𝘦 𝘢𝘯𝘥 𝘳𝘶𝘣 𝘪𝘵 𝘰𝘯 𝘵𝘩𝘦 𝘵𝘰𝘢𝘴𝘵𝘦𝘥 𝘣𝘳𝘦𝘢𝘥 𝘭𝘪𝘬𝘦 𝘪𝘵’𝘴 𝘴𝘢𝘯𝘥 𝘱𝘢𝘱𝘦𝘳. 😋 It’s just the right amount of garlic, a subtle backdrop for the tomatoes.
