Sautéed spinach with garlic: Quaratine Recipes

Today on the simple cooking cooking show-classic Italian cooking! Thank you Marta for another wonderful Recipe under the Tuscan sun. I made some sautéed spinach with garlic as a side dish. Even though we couldn’t enjoy it together, it was a joy to eat our dishes on screen and collaborate once again. Sautéed spinach with garlic

(1-2 people)
.
A recipe I learned in French culinary school but very simple don’t worry. The key here is the brown butter or « beurre noisette ». Brown the butter just till it smells sweet but not burned. It flavors all your spinach beautifully.

1 bunch fresh spinach, stems removed
2-3 whole garlic cloves, peeled
1 Tbsp butter
Pinch salt and pepper

Wash spinach well in a large bowl of water and remove stems. Dry on towel briefly Set stems aside to make vegetable stock if desired, or blend in smoothies. In a large nonstick pan, heat butter just until brown and there is a sweet smell. Then, on a fork place two garlic cloves. Put spinach into butter- standing back. Toss with garlic fork. Cook for 1-2 minutes or until all spinach is wilted. Eat immediately. 😜

You can also make this with kale or chard but it will need to cook a bit longer to wilt. Add a tablespoon or so of water to cook those hearty greens thoroughly.

Stay well and remember to eat your spinach. It’s a nutrient powerhouse!
