Ceviche de Camarón y Horchata de Avena | Shrimp Ceviche and Horchata of Oats

Ceviche de Camarón is super refreshing Mexican dish. Full of fresh lime juice, and bright cucumber and tomato, it is the ultimate refresher as the weather warms up. Craving a trip to Mexico right now? This cooling Shrimp Cocktail and Homemade Horchata will take you right to the beaches of Ixtapa.

Both recipes are very simple. The shrimp dish is a no cook one, and just requires chopping a bunch of ingredients, and the clean up is easy. The horchata is another simple recipe. Unlike traditional Horchata that is made from rice milk, this easy oat-milk version can be done in a few minutes.

Ceviche de Camarón 

Ingredients: 

  • 1 lb. Camarones colcteleros (cooked cocktail shrimp)
  • 1/2 Cebolla morada (red onion)
  • 2-3 Limon (lime)
  • 2 Jitomate (tomato)
  • 2 Pepino (small persian cucumber)
  • 1 Tbsp. Aceite de olive (olive oil)
  • 1/2 tsp. Sal con ajo (garlic salt)
  • 1 tsp. Chile habanero (chile habanero if you like it spicy)
  • 1 small bunch Cilantro
  • Pimienta negra (black pepper)
  • 1 tsp. Salsa inglesa (Worcestershire sauce)
  • Tostadas (toasted tortillas)
  • 1 Aguacate (avocado)
  • Mango (optional)

Directions: 

Chop the shrimp in small pieces. Then, chop the red onion, tomato, cucumbers, and chile in small pieces as well. Mix together in a bowl.

Then, add the lime juice, olive oil, garlic salt, cilantro, black pepper, 
Worcestershire sauce. Mix and add more salt or lime juice if needed.

To serve, serve simply with chips. Or, layer shrimp cocktail mix on a tostada and top with fresh slices of avocado.

You can also mash up the avocado to make a guacamole to layer the tostada first, then put the shrimp on top to keep it from falling off. Add a few diced mango on top if you like.

Horchata de Avena (Fastest Horchata Recipe Ever)

Ingredients: 

  • 1 cup rolled oats
  • 2 cups + 5 cups cold water
  • 3/4 cup sugar
  • 1 tsp. Vanilla 
  • 1/2 tsp. ground cinnamon + more for dusting (optional)

Directions: 

In a blender, place 2 cups of the water with all the other ingredients. Blend for a minute or so. Then, add the remaining more cold water. Add more sugar if you want it sweeter, or more water for less sweet. You can also use ½ cinnamon stick for more cinnamon flavor but you will have to strain the mixture after blending.

Serve cold with ice. Dust some cinnamon on top, or serve with cinnamon stick.
