Unreal Green Goddess Sauce to Put on Everything

Can’t stop eating this vegan green goddess sauce.

Put it on pasta, roasted veggies or use as a dip.

It’s creamy and delicious (without any dairy) and has a little kick!

This is for when your body has revolted and just can’t do pesto any more. Sorry, dairy- we can’t be friends anymore.

Make this and store it in the fridge for up to 3 days. It’s packed with nutrients all-in-one so it’s like glory sauce on whatever you put it on.

This was inspired by having lots of herbs in my fridge. But, feel free to use what you have- if you only have spinach and cilantro than just use that. No jalapeño? No problem. Use a small pinch red pepper flakes if you want spice.

Unreal Green Goddess Sauce to Put on Everything

Ingredients (Makes 2-3 cups)

  • ¼ cup almonds
  • 1-2 cups water (as needed)
  • 1 bunch cilantro
  • 1 bunch parsley
  • 1 handful baby spinach
  • 3 scallions
  • ½ jalapeño, deseeded
  • 1 garlic clove
  • 1 teaspoon salt
  • ½ lemon, juiced
  • 1 date, pitted
  • 1-2 T nutritional yeast (optional)
  • 3 T olive oil

Directions

Blend half the water and all the almonds in a blender until broken up. Then add as much as you can into the blender. All ingredients go in. You probably have to stuff it in 2 batches. Add a little water here and there (tablespoons) to keep the motor running smoothly.

When it’s all smooth, taste and adjust if needed. Maybe salt or lemon but it’s probably fine.

Store it in an airtight container for up to 3 days in the fridge. Serve over pasta, as a dressing for salad or a dip for roasted or raw veggies.
