Easy summer recipes: Roasted Asparagus with Garlic

A great side for a light fish or chicken dinner in the summer. If you’re already using the oven to make dinner, then pop these in there too. I love when dinner can be baked in the oven and not on the stove top, makes clean up a breeze.

Prep time: 10 minutes

Cook time: 20 minutes
Servings: 4

Ingredients: 

  • 2 lb. asparagus, trimmed
  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cherry tomatoes
  • 3 cloves garlic, sliced thin

Directions: 

Toss together and bake 400 F for 20-25 minutes or until slightly wilted

Keeps in the fridge for 4 days well.
