Are you looking for a vegan and gluten-free snack or dessert? That’s what I wanted when I searched this recipe. I am trying to eat more whole-food plant-based because I hear its really good to balance your hormones.
I eat everything but this week I decided to go vegetarian to start. I really wanted a nice dessert, but one that didn’t come out of a package with a long list of ingredients. So, I found a way to use that old banana and the dates we have on the counter. I was SUPER SURPRISED. these are delicious and can be a snack, dessert, or even breakfast. It’s almost like having an awesome oatmeal bowl in a bar form. So, even though I don’t have to grab and go out these days, I would definitely make these before hand if I had to go out and about.

- no flour- its made with whole grain oats
- no refined sugars – its sweetened with dates
- no eggs so it doesn’t have any added fat except the natural fats in the walnuts
- its dessert but still feels like you’re doing your body good

Banana Blueberry Bars
Ingredients (makes 12 bars):
- 1 cup dates, pitted and halved
- 1 ½ cups apple juice
- 3 cups rolled oats, divided
- ¾ tsp. cinnamon
- ¼ tsp. nutmeg
- 1 ½ Tbsp. baking powder
- 1 large or 2 ripe bananas
- 1 tsp. vanilla
- 1 cup blueberries
- ½ cup walnuts
Equipment:
- 8″x8″ or 9″x9″ square baking dish
- Blender
- 2 bowls
- Whisk
- Spatula
