Fry Bread Pizzas with Discarded Starter by Connor | Recipes in the Quarantine

Have you jumped on the Sourdough bandwagon? Don’t you just hate discarding half of your starter to feed it each time? Well, good news, you don’t have to waste it! It turns into great fry bread- or flatbread pizza. And, it has all the good probiotics in it too.

It can all be made in a nonstick pan. No oil is required.

This was a LIVE instagram video. Thank you @connor.cooks for the great inspiration to make a meal out of starter that you would normally throw out! The starter has great probiotics so you’ll do yourself a favor to eat it this tasty way.

This a wonderful way to repurpose leftovers and make it an exciting new meal. They are delicious, crispy on the outside, soft on the inside and addictive for some reason.

Pictured here are the pizzas that Connor and I made on the show- we dressed them a bit Italian with Prosciutto and some others more Southwest with jalapeños and peppers.

This is less of a recipe, and more of quick pizza how-to with some of our favorite toppings. So below, you’ll find some ideas of how to personalize your fry bread pizza. (It’s more fun that way anyway)

Treat these funny pancake-looking pizzas the same way you would make a pizza in terms of toppings, They are hearty and can take on all the toppings you’ll give it. I would just be sure to make them pancake or English-muffin size so it cooks all the way through well, than like a 12″ (large) pizza that could take a long time to cook inside.

Fry Bread Pizzas

  • ½ cup -1 cup Discarded starter
  • Toppings
  • Non-stick pan

Topping ideas:
1. Southwest Chicken
  • cooked and sliced chicken breast
  • queso fresco
  • green onions
  • jalapeños (optional)

2. Italian with Egg
  • tomato sauce
  • mozzarella cheese
  • fried egg
  • oregano

3. Kebab Pizza
  • leftover beef kebab, cut up
  • cooked bell peppers
  • mozzarella cheese
  • jalapeños (optional)

Once you’ve decided on your toppings, get a nonstick pan. Heat on a medium heat. You don’t need have to put any oil in it. Pour the starter directly into the pan. Cook for just a couple minutes or until it bubbles and looks dry on the edges, similar to a pancake. Then, flip it. Now, on the other side, top with your toppings and cook on low heat until cheese is melted and toppings are heated through.
These are great served as appetizer cut into wedges. You can have kids or family members personalize their own too.
The texture is different from a regular bread or pizza. It is crispy on the outside and very soft and sometimes chewy inside. At first it may be an acquired taste (may be a little sour) but with the right toppings I think the flavor becomes somewhat addicting.
*For the fry bread with egg, cook the egg in the same pan if the pan is big enough. Once the cheese is melted  and the egg is cooked, place it on top.
