This is one of those moments in life where I was really proud to call myself a chef. I spoke on Career day to a bunch of 4th graders about being a chef, and all the other jobs in the culinary arts. After talking a little bit about my story and how being a chef has taken me to all these cool places, we made this simple dessert. It was a hit with the kids of course. (duh!) I hope I conveyed some of that passion and excitement I have for cooking to them.
Here it is for you to enjoy. The original idea came from Marie Fiebach at feedyourfamilytonight.com
She is a wonderful lady, a good friend, a TV food personality and mother of four. She has some great tips for meal prep and cooking for a large family.
BANANA BONBONS
Ingredients:
- 2-3 ripe bananas
- 1 cup chocolate chips
- 1 tsp. Coconut or vegetable oil
- Chopped toasted almonds or peanuts (optional)
- Sprinkles(optional- I used patriotic colors for Memorial Day weekend)
Equipment:
- Cup measure
- Teaspoon measure
- Measuring cup
- Spoon
- Fork
- Parchment or wax paper
- Baking tray
.
Do beforehand:
Slice banana in 1/2-3/4 inch rounds and freeze bananas 8 hours or overnight. Place on parchment paper or wax paper on baking sheet and in freezer.
.
Place chocolate chips in a small microwave safe bowl like a measuring cup. Add coconut oil and microwave on high for 1 min. Stir for 20 second intervals or until melted. Dip bananas in chocolate and use fork to retrieve banana. Sprinkle with toppings
Wait couple minutes because will be hard to eat or freeze remaining in a ziplock.
(Use pineapple, mango, berries or other fruit if banana isn’t your favorite)

place on parchment or wax paper to freeze overnight. Frozen banana is also great for smoothies or dairy-free ice cream. |
