45-second Egg Sandwich

No need to go to the local drive-thru for this popular breakfast! It will take you less time to prepare this egg sandwich at home than it will take you to wait in line at the drive-thru, not to mention save you calories!

The secret to the 45-second egg sandwich is that it is quickly whisked in a glass measuring cup and microwaved. The egg fluffs up, and can immediately be topped with cheese and a vegetarian sausage patty. You will be glad to do away with the extra grease that usually comes from the fast-food version. Because it’s so easy, it’s a great tip to teach your kids so you can be sure they start the day out right with an adequate intake of protein. Kids will love to see how the egg turns from liquid to a fluffy perfect sized omelet to top on their English muffin. The vegetarian sausage patty is not always necessary either. You can add spinach, tomato, mushrooms, or bell pepper, to add some vegetables into your diet. Avocado is always great too!

Ingredients (for 1):
1 English muffin, split (whole wheat preferred)
1 egg
1 vegetarian sausage patty
1 slice of American or Cheddar cheese
Non-stick Cooking Spray

Directions:
1. Warm the frozen sausage patty first. In the microwave, heat the patty for 50 seconds to 1 minute, or until entire patty is heated through. Set aside.

2. Spray a 1 or 2-cup glass measuring cup lightly with Non-stick Cooking Spray. Then, crack the egg into the cup and whisk briefly with a fork. Leaving the egg whole will cause an explosion of the yolk upon heating. Place the egg in the microwave for 45 seconds to 1 minute or until there is no remaining liquid in the cup.

3. In the meantime, toast your English Muffin in the toaster if desired.

4. Finally, assemble your breakfast sandwich, first place the slice of cheese, then the egg, and the patty in between the toasted English Muffin. Be sure to wait a minute or so for the egg to cool down, as it is very hot! Enjoy your homemade, “fast” food!
