I want to share with you some of my favorite Mexican recipes. I was lucky to grow up Mexican-Armenian in California. And, I was lucky to learn Mexican cooking from my dad, who is also a health nut.
My dad and I would have hour long discussions on how to make Mexican food more healthy, because it is often served greasy, and makes you feel really heavy afterwards. Tamales, tacos, tortillas! These recipes are the answer. Mexican food can be healthy. And it doesn’t have to be fried in lard to make it crispy or tasty.
