Roasted Kale with Onions

Kale may not be the most glamorous vegetable, but if you eat it, you will probably look and feel more glamorous. Hailed as the “queen of greens,” and “one of the healthiest vegetables on the planet”, kale has many vitamins, minerals, and antioxidants to renew the body. Roasting is a family favorite way to prepare kale because they almost crisp up like potato chips and turn into great finger food. How can one resist picking at green crispy bits with onions on top?
Ingredients (Serves 6)
1 bunch curly kale, roughly chopped
1/4 yellow onion, chopped
2 teaspoons olive oil
1/8 teaspoon salt
1/8 teaspoon red pepper flakes or pepper
Preheat the oven to 375º F. Wash kale with plenty of water and roughly chop. Mix kale and all ingredients on a baking sheet. The best way to mix evenly is to use your hands to toss on the baking tray.

Bake for 10-15 minutes or until crispy and slightly browned on leaf edges. 




Eat right away, or mix into your eggs the next morning!
