Linguini di Spinaci

I love homemade pasta, and I am so proud of this! Especially, after a failure making chocolate pasta… The color and “green” flavor came through in the pasta, so it was a success. To get the spinach into the pasta, I first sauteed fresh spinach, pureed it, then worked it into the flour, semolina, and egg mixture. Then, followed the same way I make fresh traditional pasta.
Next challenge, red pasta with tomato paste! Then I can complete the Italian flag.
