This is a simple recipe for a dish I had at a Chinese restaurant. I like how the mango cooks down a little and makes a kind of sauce.
It’s such a light and easy dish, and if you love mango, you’ll love it!

Mango chicken
(For 2-3 people):
- 2-3 tsp. Vegetable oil or Sesame oil (recommended)
- 1 garlic clove, smashed
- 1 lb chicken, sliced thin as possible
- 2 small mangos, peeled and sliced
- 1-2 Tbsp. Soy sauce
- 1/4 cup frozen peas
- Green onion(optional)
- Cilantro (optional)
Directions:
1. To slice chicken easily I like to freeze it for 1-2 hours and then you can slice it really thin. If you don’t have time that’s okay, just slice it as thin as you can.
2. Heat a medium pan and add ½ of the oil and the smashed garlic clove. When shimmering add the chicken but don’t crowd the pan. Probably do in it in two batches. Cook on a high heat for just a couple minutes or until no pink remains. Remove chicken and place on a plate. Repeat with remaining chicken.
3. When the chicken is cooked, add the mango slices in. Then add the soy sauce, just start with a tablespoon to start and taste. Add more as needed.
4. Cook for another minute or two, moving it around. Then add the peas and cook for another minute or two or they turn bright green. Then remove from heat.
5. Add green onion and/or cilantro on top just before serving.
