Hey Family and Friends! You may have been wondering where I went! I moved! I’m back and I’m still cookin’. I’m in a new place so still getting the hang of it. But, here are two debut recipes in the new kitchen for this Wellness Wednesday. They are perfect for your next picnic 🥪 and easy to make. Enjoy and I’ll be making more videos for you soon!

“Chuna” Salad Sandwich (vegan, kid-friendly)
Ingredients (1-2 sandwiches):
* 1 cup cooked chickpeas, drained
* 1 celery stalk, sliced thin
* 1 ½ Tbsp. Mayo (can get vegan)
* 1 Tbsp. Mustard
* Dill pickles (optional)
Directions:
Smash chickpeas with a fork or potato masher. Mix other ingredients into chickpeas and add salt and pepper if desired. Serve on bread with tomato and lettuce and more pickles if you like. Parsley would be nice too. *Surprisingly great texture and flavor.*
