Where are my Greek food lovers?!
Im gonna tell you a little secret.
If you love Greek food and don’t want to follow recipes, just follow these flavor combos to make your own dishes: 1. olive oil + lemon + oregano/dill or
2. garlic + olive oil + red wine vinegar.
Remember these basic combos and you can make a weekday soup or salad like the ones pictured here!

Chickpea Soup with Lemon and Herbs
Ingredients (Serves 2-4):
- ½ lb. dried chickpeas or 2 cans, rinsed
- ½ medium onion, coarsely chopped
- 1 garlic clove, minced
- 1 small bay leaf
- ¼ cup extra Virgin olive oil + more to serve
- Salt and pepper
- Juice of 1-2 lemons
- 1-2 Tbsp. Chopped fresh dilll
Directions:
Cook garbanzo beans in water from dried until tender. In a small pot add all ingredients except lemon juice and dill. Add just enough water to cover beans and vegetables. Bring to a boil, then lower and simmer with lid for 20-30 minutes. Add salt and pepper to taste. To serve, spoon into bowls and finish with lemon juice, olive oil and fresh dill.
Dandelion Greens Greek Salad
Ingredients (for 2):
- 2-3 cups dandelion greens
- ½ red bell pepper, chopped
- ¼ cup cherry tomatoes
- ½ lemon, juiced
- 1-2 Tbsp. Extra virgin olive oil
- Salt and pepper
- 1-2 Tbsp. Feta and dill (optional)
Directions:
Add all ingredients into a bowl and dress with lemon juice, olive oil, salt and pepper.
