Pancake lesson: experience comes from cooking one pancake at a time

In today’s lesson, it’s about cooking pancakes. The thing about pancakes is that the first ones are usually ugly and splotchy. Like life, without experience things might be a little rough around the edges. I know when I started teaching cooking classes on my own I had a lot of tough moments. I wasn’t organized and some students felt like they didn’t get good service. But, after doing it a few times I started getting 5 star reviews. It felt so good. So like pancakes, the first times might be ugly but stick with it. With experience your pancakes will get better. You can also smear oil with a paper towel on the pan to get perfect pancakes from the start. But I learned that from experience too!

Pumpkin Pancakes
(adapted from Blue Zones website) vegan and gluten-free
Ingredients:
(makes 10-12 small pancakes)
- 1 cup oat flour (store-bought or make by blending quick oats)
- ¼ cup + 2 Tbsp. vanilla soy or almond milk
- ½ cup pumpkin puree
- ¼ cup applesauce
- 1/2 tsp. pumpkin pie spice or cinnamon
- ½ tbsp baking powder
- 1 tbsp apple cider vinegar
- 1 ½ tbsps maple syrup
- Optional (chocolate chips)
Directions:
- In a large bowl, mix all dry ingredients together.
- Add the wet ingredients and mix until combined.
- Let batter sit for 3-4 minutes to thicken. Add chocochips if using.
- Heat a non-stick pan over medium heat. Once pan is hot, reduce heat to medium-low.
- Oil pan lightly and gently pour batter into the circular size you want. *Don’t touch pancakes for a couple minutes or they will break. They are delicate so be gentle. If they stick to the spatula, wait a bit more before turning them.
- Flip and cook the other side after 1-2 minutes.
- Repeat until batter is used up. Makes 10-12 small pancakes.
