Egg Roll in a Bowl (or Lettuce Wrap) with Marie: Recipes in the Quarantine

Another day in the quarantine….AND another fun show on Instagram LIVE!@chefjoannas

Today, I teamed up with TV personality, Marie Fiebach from Wichita, Kansas. In 2017, she started her blog, feedyourfamilytonight.com and does some really awesome, clean meal planning for families.
She is a mother of 4 teenage kids (one was behind the camera when we filmed), so her recipes must be taste-test approved and “manic mom” approved. This is one of her family’s favorite meals, and I was happy she was willing to share it with us today.
It’s low fat, and full of vegetables so you can feel good feeding it to your loved ones. It’s also one-pan meal (woohoo) so it won’t have you running around and cleaning up 20 pots after.
It was a delicious one, using the Chinese aromatic trinity- garlic, ginger, and scallion. Plus a little soy sauce and sesame oil.
I had mine on a lettuce leaf (in place of rice) and made a few substitutions of veggies because when in quarantine….use what you have. But it all turned out delicious.
Check out Marie’s original post of the recipe here: feedyourfamilytonight.com
My version and substitutions are below!

Egg Roll in a Lettuce Wrap

Ingredients:

  • 1 lb. ground turkey
  • 2 cloves garlic, minced (can use 1 tsp. dried)
  • 1 piece ginger, minced (can use 1/2 tsp. dried)
  • ¼ tsp. red pepper flakes
  • ⅓ cup soy sauce
  • ½ cup water
  • 2 celery ribs, chopped
  • 4 radishes, quartered
  • 2 carrots, shredded
  • 3 green onions, sliced thin
  • 1 tsp. sesame oil
  • Sliced green onion or cilantro for topping
  • Lime wedges for topping
  • Lettuce leaves for wrapping

Directions:

1. In a large nonstick pan, brown the ground meat well, about 5 minutes. Break pieces up and cook until a little crispy.
2. Then, add in the garlic, ginger, red pepper flakes and stir for 1 minute.
3. Next, add the soy sauce and water and scrape the pan to release all the crispy bits from the bottom of the pan. This is flavor! Let the liquid reduce till there is almost no liquid.
4. Add celery, radishes, carrots and cook until softened about 3-5 minutes.
5. Then, stir in the green onions and sesame oil.
6. Serve over a bed of rice or on a lettuce leaf. Top with more green onion, cilantro, and squeeze of lime if you have it. Enjoy.

Today on the Simple Cooking Cooking Show- Egg roll in a bowl (or lettuce wrap) with Marie @mariefiebach . Easy, clean ingredients to please the whole family. Oh and gluten free too! . Marie and I had tons of fun on the show today. She talked about being a busy mom and having limited time to cook. And this is one of her go to recipes because it’s done in 30 minutes. She also shared about her non-profit work with underserved teens and teaching them how to cook on a budget. She would often share this recipe with them because it’s a time and money saver. . She mentioned a great tip on this: you can substitute dried ginger and garlic for fresh to lower cost and prep time. . Ground turkey is the base with tons of other veggies for a perfect one pot meal. Marie called it « manic mom » approved! . I substituted some other veggies like radishes in place of cabbage (because in quarantine use what you have) and it turned out so tasty. Combination of ginger, garlic, scallions and sesame oil made it a real treat since I haven’t had Chinese food in a long time! . I’ll post my version on the blog but catch her original recipe and the story behind the dish on her website: https://feedyourfamilytonight.com/egg-roll-in-a-bowl/ . #simplecookingcookingshow #glutenfree #lettucewrap #eggrolls #familymeals #familyrecipes #cleaneats #eatclean #lettuce #lettucewraps #foodporn #instafood #instafoodgram #cookingshow #cookingbasics #glutenfreerecipes
