Always a crowd pleaser. But they key is great tomatoes!!
The way I always guarantee a great tomato bruschetta for my guests is by buying sweet cherry tomatoes. Whether tomatoes are in or out of season, the cherry tomatoes are always sweet and flavorful. That’s my little chef tip for the day!
Bruschetta
3-4 medium ripe tomatoes (or 2 cups cherry tomatoes when not in season)
Salt and pepper to taste
2 Tablespoons extra virgin olive oil
6 basil leaves, thinly sliced
6 ½” thick slices of bread
2 garlic cloves
Halve the tomatoes and remove some of the seeds. Then, dice into chucks. Place them in a bowl and add a generous pinch of salt and a little pinch of black pepper. Mix and add 1 T olive oil and the basil. Let them sit about 10 minutes to absorb the flavors.
Toast or grill the bread. Then, rub bread with a peeled garlic clove just to impart a whisper of garlic into it. Top bread with tomato mixture and serve immediately.
