NO ADDED SUGARS!
In 15-20 minutes, you can have this sauce done! That’s the kind of recipe I keep in my back pocket.
There are no added sugars, like you will find in the many bottled sauces at the grocery store. I love that I can control what goes into my sauce. I always have a can of tomatoes (San Marzano- get them at Trader Joe’s) on hand so I can whip this sauce up quick. I feel so much better eating this homemade sauce than the one in the jar!
The carrots and onions give the saice a great sweetness without having to add any sugar. Give it a try and pair it with Chicken Parmesan or my recipe for Turkey Meatballs al Forno.
Homemade Marinara Sauce
Yields: 6 cups
- 1 tablespoon olive oil
- ½ large onion, diced
- ½ cup diced carrots
- 1 tablespoon minced garlic
- ¼ teaspoon red pepper flakes
- 1 (28-oz) can diced plum tomatoes (San Marzano are best)
- ¼ cup finely chopped basil (Tomatoes had basil in it, so didn’t add this time)
- 1 bay leaf (optional)
- 1-2 t sea salt
- freshly ground black pepper
1. In a medium saucepan with high sides, saute the garlic first in 1T olive oil, just until golden brown, about 1 minute. Then, add the onion, carrots, red pepper flakes and cook until a little translucent, about 2-3 minutes.
2. Add tomatoes and juice. Add bay leaf if using.
3. Bring to a boil, then reduce to a simmer. Cook for 15 minutes until sauce has thickened slightly.
4. Puree with an immersion blender or blender (Take out the bay leaf if using).
5. Return to saucepan and season with salt and pepper to taste. Start with 1 teaspoon salt. Garnish with the remaining basil.
