What did I eat? Why did I do it?
I want to feel healthier and have more energy. I went vegan for a month a few years back and felt really nice and light. But, it became hard socially to always seek out alternatives. Now, I describe myself as a flexitarian.
But, I know adapting some more vegan-friendly eating habits can really help to improve my health and stamina. So, that’s just a little background.
Does vegan take planning? Yes.
Is it convenient. No, I’m not going to sugar coat it. It takes practice and planning and probably requires you to up your cooking skills.
Anyways, I’ll share with you what I ate for my day as a vegan.
My hope is that it helps you incorporate some healthy habits into your diet whether you’re vegan or not.
Just remember to enjoy your food.
Breakfast
Oatmeal with raspberries, blueberries and pomegranate
Coffee
Lunch
Quinoa bowl with Spinach, and roasted carrots and some potatoes
Snack
Green tea
Toast with fruit in it and light sugar
Dinner
Penne pasta with green goddess dressing
