Bittersweet

Are you excited for turkey day?
 
I am too, but it’s bittersweet…
This will be my first thanksgiving without Grams (my grandma).
One of my favorite thanksgiving memories was the tradition we created together – preparing her recipe for spinach patties… 
We shared that tradition all the way up until last year when she was 92.
One thing in particular I always enjoyed was adding in a handfuls of onions just so she would softly yell, “okay, okay, enough – it’s not onion patties”…
I’m grateful for those memories that make me laugh, but I still miss my Grams…
So to celebrate Grams and her memory I would love to share with you her recipe.
  • It’s only 3 main ingredients – onions, spinach, and eggs. 
  • Vegetarian and gluten-free
  • They’re also great in a breakfast sandwich the next day with a little cheese.
It’s a beginner level, so don’t feel shy to try it!
