Yes, I know, zucchini in bread? But, I am telling you that this is a delicious bread. The fact that you can eat it for breakfast, dessert, or with coffee or tea makes it so versatile and quick to disappear. My mother exchanged this recipe with our Mormon neighbors who really know how to bake. In fact, I think they welcomed us into the neighborhood by giving us a loaf of zucchini bread. And our family just couldn’t get enough of it so my Mom got the recipe. So, whenever I enjoy this bread, it is sort of comforting and homey. Hopefully, it can do the same for you. It is a simple recipe and yields two loafs which are easy to store. The ingredients are simple-basically zucchini, vanilla extract, chopped walnuts, cinnamon and flour, sugar etc.
