One of my favorite salad dressings to make. And it can last up to 7 days in the fridge. Say hello to eating healthy and more salads!😄 here’s the recipe:

Honey Mustard Dressing
1 ½ tbsp Dijon mustard
3 tbsp olive oil
2 tbsp. apple cider vinegar
1 tbsp honey
1/8 tsp. salt 
Pinch of pepper
Instructions
In a bowl or jar, mix all dressing ingredients.

Easy Chicken Piccata!
Recipe here 👇🏼

Here’s a simple recipe for chicken piccata that requires only a few ingredients and minimal techniques:

Ingredients:

2 boneless, skinless chicken breasts
1/4 cup all-purpose flour (works with gluten-free flour)
Salt and pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
1/4 cup chicken broth
1/4 cup fresh lemon juice
2 tablespoons capers, drained
1/4 cup chopped fresh parsley
Instructions:

Slice the chicken breasts in half horizontally to make 4 thin cutlets. Season the chicken with salt and pepper, then dredge the chicken in the flour, shaking off any excess.
Heat the olive oil and 1 tablespoon of the butter in a large skillet over medium-high heat until the butter is melted and the oil is hot.
Add the chicken to the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and transfer to a plate.
Reduce the heat to medium and add the chicken broth, lemon juice, and capers to the skillet. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet.
Bring the sauce to a simmer and let it cook for about 2-3 minutes, or until slightly thickened. Add the remaining tablespoon of butter to the skillet and stir until it’s melted and the sauce is smooth.
Return the chicken to the skillet and spoon the sauce over it. Let it cook for about 1-2 minutes, or until the chicken is heated through and the sauce is hot.
Sprinkle the chopped parsley over the chicken and sauce, then serve immediately.

Ode to the Easy Bake oven.
.
People ask me “did you always know you wanted to be a chef?” And my answer is yes. Ever since I got my easy bake oven at six years old (thanks Mom), I loved the feeling of feeding people.
.
I’d make thumb sized cookies in that light-bulb powered oven and give them to my brothers as they waited wide-eyed nearby. It gave me that feeling of pure amazement as a kid. I could make something by myself, something edible? Wow! I realized what I had the power to do. Create stuff that made people happy. 
.
Fast forward, still figuring out the financial part, lots of detours and u-turns like a fun {failed} energy bar business. 
.
If your struggling finding your thing or reconnecting with it, keep going. I tried other things only to realize I had to go back to food. 
.
I don’t have all the answers and I don’t have this landfall success yet, but I’m here showing up. And at the end of the day I’m just sharing what makes me happy. Maybe it will inspire you to do more of what makes you happy, too.

Since the weather has been finally warming up here (well I actually like the rain) it’s time to pull out the salad bowl ideas! I make this kind of thing when I have a bit more time. But you could meal prep the things the day before then build it day of. I always feel great eating it.
