Sometimes the best recipes I find are not from chefs, but the people who have little time to cook and love simplicity. This recipe came from a farmer I visited in Northern California. He grows the flat peaches featured here. While touring his farm, he gave me this great short and simple dessert recipe.
Although the peaches are sweet enough in the summer season to be a satisfying and healthy dessert, a little enhancement every now and then can make everyone smile a little more. This dessert is still light and fruit based, so you shouldn’t feel guilty about enjoying it. It’s amazing how much this truly tastes like peach pie! You don’t need the crust; the almonds satisfy the need for a crunchy texture!
Ingredients (1 dessert serving or 2 sampler size servings)

1 flat peach

1/2 teaspoon ground cinnamon

2 Tablespoons Fat-free Vanilla Greek frozen yogurt

2 raspberries (for garnish)

5 almonds (for garnish)
Set the oven to 400º F. (Or keep the oven on after roasting vegetables for dinner). Place the peach on a small non-stick pan and place in the oven for 15 minutes or until the peach is slightly soft.
Serve hot topped with the frozen yogurt. Use raspberries and almonds as the garnish, and a sprinkle of cinnamon.
