Greens provide some of the best nutrients of all the foods. They protect against heart disease, cancer, and stroke and can improve vision and memory. Add greens to your smoothies, wraps or pizza to make it easy to get your 2-3 servings.

This is a simple way to eat greens. I started with two big bunches- one bunch of spinach and one bunch of dandelion greens. I blanched them in boiling water for a minute and then topped them with olive oil, lemon, salt and pepper. I paired it with Ikarian Baked Beans- the butternut squash balances the bitterness of the dandelion greens.

Ingredients (for 2-3):

  • 8 cups dark leafy greens (spinach, dandelion greens, mustard, kale, collards, etc.)
  • 1 lemon
  • Drizzle of extra virgin olive oil
  • salt and pepper

Directions: 

Bring a medium pot of water to boil. Chop greens roughly. When water comes to boil, add a few pinches salt. Place greens in water and cook for 1 minute. They will turn bright green.

After 1 minute, remove them and place in a strainer. (Dunk in an ice bath if not eating right away to stop from cooking)

Dress greens with lemon, olive oil, and salt and pepper to taste. 

Serve with Hummus, Ikarian Baked Beans, or Black Eyed Pea Salad.
