Emergency 2-minute Chocolate Mug Cake for One: Quarantine Recipes

Desserts 120: [Part 1] 2-minute chocolate mug cake . Thank you @christinatosi and @zoebakes for the amazingly simple recipe! 😋 taste test approved . TWO-MINUTE CHOCOLATE MUG CAKE 1 egg
3 T milk
3 T neutral oil
3 T flour
4 T sugar
2 T cocoa powder
3 T semi-sweet chocolate chips
small splash vanilla extract
pinch salt
1 small or medium coffee mug (MicroSafe) Add wet ingredients (including the egg) to a small or medium coffee mug and mix well. Add the dry ingredients and mix thoroughly. Add the chocolate chips and vanilla extract, and mix again. Put your mug into a 1000-watt microwave for 2 minutes. The cake will rise over the top of the mug, but don’t be alarmed. Allow to cool and tip out onto a plate if desired. EAT! (This can serve 2 if you want to feel slightly more virtuous.) Why is this the most dangerous cake recipe in the world? Day 17 of my quarantine from the Coronavirus. Time to get experimenting with new techniques in the kitchen. And, this was one of them.

“Cake for one,” anyone?

I know we all need it right about now.

It was a chocolate cake kind-of-day to say the least. I even proceeded to eat the cake on the cutting board I un-molded it onto. Dollop of vanilla ice cream on top and it became my project for the next 10 minutes. 
Some days are harder than others. Fighting loneliness, low-energy and a loss of hopefulness on occasion. I am no super human and succumb to such feelings now and then. 
At these times, the best remedy I find is: baking. Whether simple or complex, there is just some satisfaction of mixing powders and chemicals like a scientist and coming out with a somewhat predictable result. Unlike the world right now- very unpredictable. A cake that rises up can be the happiest moment of the day!
I’m sure a lot of people are feeling this way right now- baking as a medicine. Just look at all the fresh loaves of bread coming out of the oven on Instagram profiles. It is a wonderful time indeed to loose oneself in the kitchen. To turn on the oven, feel the heat, and make home feel a little more warm and comforting with a risen loaf or cake. 
So, this recipe is for you. Perhaps your first baking project, or 10th one by now. It takes about 5-minutes to prepare from start to finish, depending how organized your pantry is. It’s your emergency chocolate cake when the world feels on fire.
