Need a brunch recipe?! No Sugar Added Gluten-free Banana Pancakes. These are my favorite gluten free pancakes for sure. I think adding baking powder makes the big difference. They feel like a real pancake and the best part is that there is no added sugar. The bananas sweeten it so you don’t need syrup (but I needed a drizzle). Hope you enjoy this simple recipe. The whole thing can be made in the blender. No need to buy oat flour- just blend whole rolled oats in your blender.

No Sugar Added Gluten-free Banana Pancakes
Ingredients(3 servings):

* 2 medium ripe bananas (best when they have lots of brown spots)
* 2 eggs
* 1/2 cup unsweetened almond milk
* 1 teaspoon vanilla extract
* 1 ½ cups old fashioned rolled oats, gluten free if desired
* 2 teaspoons baking powder
* ½ teaspoon ground cinnamon
* ¼ teaspoon salt
* Olive oil, for cooking
Instructions
1. Add all of the ingredients to a blender and blend on high until completely smooth, about 30 seconds to 1 minute.
2. Lightly coat a griddle with coconut oil, vegan butter or olive oil and place over medium heat. Once pan is hot, add 1/3 cup of the batter to the griddle for each pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges.
3. They brown quickly so lower the heat in the pan. I keep them warm in my toaster oven set to 250 F. Makes 9 pancakes.

Does this salad make you crave salad? I hope so! It’s one of my favorite salads to make. It’s great for potlucks as well. Everyone loves a pretty salad.

What are these delicious morsels? These are rainbow cookies! They aren’t really « cookies » but layers of cake sandwiched between apricot jam and topped with chocolate. It’s a traditional cookie from Italy but has become tradition for Jewish people too. That’s probably why you remembering seeing them in a Jewish bakery.

@daryls15 suggested making them together because they are Passover friendly (no rising ingredient).

It’s an undertaking (10 eggs!) but I had fun and it took me back to culinary school days of assembling cakes, like the Opera cake 😋.
.
I experimented with natural food dyes and it worked!!! For pink- I used beet juice and for green- matcha powder. Flavors were good and it didn’t change the texture. So I’ll keep that in mind for future baking projects.
.
So the verdict on these Rainbow Cookies? They are delicious and fun. It was my first time making and trying them. (They are much taller than they’re supposed to be!). I love the simple flavors of the cake, apricot jam and chocolate. It’s not too sweet and is a perfect tea cake. I’d love to make them again, make the layers thinner and experiment with more natural food dye colors. Blue sounds fun. Oh yea, and they’re gluten free! So that’s pretty cool.
