Okinawan Sweet Steamed Bread | Easy Vegan Desserts, No Oven Required

This is a simple recipe inspired by the Blue Zones cookbook in Okinawa, Japan. Unlike the US, most Asian countries don’t have ovens to make cakes and muffins. Instead, they steam their sweet breads on the stovetop. They come out SUPER fluffy and soft. It is worth trying! This was my first try and I really enjoyed it. I want to experiment more, maybe coloring them purple with mashed purple sweet potato. 
Feel free to add blueberries, chocolate chips, cinnamon or whatever you would add to pancakes. These are delicious and would be perfect for a picnic snack! (No egg or dairy!)

Okinawan Steamed Sweet Bread 🇯🇵 (cross between muffin and pancake)

Ingredients (makes 6-8 small muffins):
* 1 cup dark brown sugar
* ¾ cup hot water
* 2 cups flour
* 2 tsp. Baking powder
* ⅔ cup unsweetened soy milk
Mix hot water and sugar together until sugar is dissolved. Add remaining ingredients. Spoon halfway up in greased ramekins. steam for 15 minutes in a pot with steamer basket. Toothpick should come out clean when done.
