The right way to sauce pasta | Americans vs. Italians | The Great Sauce Debate

Before I worked in an Italian restaurant, I was saucing my pasta the American way. 

The American way means you cook your pasta, drain it, and then pour sauce on top

It works, but once I started making my pasta the Italian way, it 10x’ed the flavor!

Italians always cook their pasta ‘al dente’, or a minute or two less than what the package says. 

Then, they drain it and finish cooking it in the sauce. 


Cooking the pasta a minute or two with the sauce lets the pasta absorb all that flavor. 

I just can’t make pasta the American way anymore.
