Mediterranean-style Baked Fish

The goal of this recipe is to make it another “Wednesday night meal” that can be put together from start to finish in under an hour. I served this with roasted green beans, but you can roast some asparagus, zucchini or other veggie if you don’t care for the beans. Low-fat, Gluten and dairy free

Ingredients:

  • 2 tomatoes, chopped
  • 2 garlic cloves, sliced thin
  • ½ red onion, sliced thin
  • 1 small zucchini, chopped
  • 1 lb. sole fish or other white fish
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • sprinkle of paprika (optional)

Preheat oven to 400 F. Put oil in glass baking dish. Layer with onions, tomato, garlic. Bake for 15 minutes. After 15 minutes, layer fish on top and bake 5-10 minutes or begins to flake.

Top with lemon, basil or parsley when done.
