What do I eat for a Vegan Lunch?
It may feel harder to plan or restrictive, if you are not aware of the multitude of choices you actually have! Below are two lunch ideas for you.
I know some of you probably don’t like to eat Tofu, but every once in a while, I think it is okay.
For Vegan Lunch 1, we have a Miso glazed Tofu and Bok Choy Bowl over Brown Rice. For the glaze recipe, see below.
For Vegan Lunch 2, we have a Quinoa-Brown Lentil Mix with Peas. On top is roasted asparagus and sliced Almonds. This dish was served with a hot bowl of Cauliflower Soup.
Best used an a marinade for Tofu or vegetables for grilling.
Mix together all the ingredients below. After used as marinade, strain and boil it gently in a pot and can use as a sauce.
- 1/4 cup light yellow miso
- 1/2 sweet mirin (Japanese wine)
- 2 T rice vinegar
- 1 T sugar
- 3 T light soy sauce
- 1 t ginger
- 1 t garlic
- 1 t sesame oil
