Called “keen”-“wa”. Healthy, yes, I know but fascinating. It comes from South America. It was gold to the Incas. This grain starts out like baby red lentils and sprout as you cook them. You cook it like rice but it looks like lentils with a mix of bean sprouts. Very hearty and really actually healthy. We’re talking 6 grams of protein and 12% iron. That’s really good so no meat required. Anyway, I definitely need more practice with this grain, perhaps sushi? or salad?
